There is no doubt in my mind that you will thank me for this recipe as,
even after 40 years behind the stove I thank a friend of mine for sharing it
with me... of course... I had to make it just a bit better. So you are going
to say... Duck in the Desert... and I am going to reply... "yes, there are
Ducks in the Desert", wild Wood Ducks are the best, you can also find Duck
breasts in your store, generally in the freezer section. Make a few extras as
they will be gone before you can even get to it... there is an addicting characteristic
to these.
Duck Breasts, butterflied
Cream Cheese
Jalapeño, fresh works better, canned is alright, sliced.
Slices of Bacon. Maple bacon works great, Country Bacon also.
This is short and sweet and doable in the field if you are indeed hunting
or just have store bought Duck Breasts. Butterfly the breasts, insert a bit of
cream cheese and a few slices of Jalapeños.
Close tight and wrap a slice of bacon around it. Insert a toothpick to hold
it all together. Get your grill ready, not too hot and keep turning while cooking.
I personally pre-cook the bacon just a bit, still leaving it at its soft stage
as the Duck will cook faster than the bacon.
Serve immediately and Enjoy... I know you will.
